Life Without Carbs, Week 1

I made it through school week number 1 with my new diet. I can proudly say that my glucose read below the cut off number every time (besides after the huge piece of Costco pizza as mentioned in the last post)

Working at a school has an extra benefit- a nurse! After a frustrating first day trying to draw enough blood and wasting strips to get a reading, our school nurse spent 15 minutes with me talking about diabetes and gave me some tips for getting a reading on the first try. I haven't wasted a test strip since. She even sent me a follow up email the next day to make sure I was successful with testing.

I spend a little more time at night cutting veggies and thinking about my snacks for the next day. I measure out my pasta and even my chili to not overeat my carb allowance. Week one was fine- I even think I could eat a tad more carbs since my numbers were well below the 140 mark. Jason and I try to take a 15 minute walk after dinner or I walk the indoor track at school to help my numbers stay low. I do miss eating 1/2 bag of pretzels in one sitting or a big ole bagel in the morning.

My meals haven't changed completely- just less starchy stuff. It's not quite the end of the world... except with the earthquake and tsunami in Japan, you never know, the end may be near. Dieting is for the birds though. I feel very fortunate that until this point in my life I've never had to think twice about what I ate. I never had to say no to ice cream or that extra helping of boxed mac n cheese. If anything, this experience has gotten me to realize I do eat way too many carbs and Americans in general have enormous portion sizes.

Well don't think of it as a diet but rather a life style change. I'm doing great on my life change - lost 6 lbs in 5 weeks and I don't even miss the white stuff. Have more energy too. Keep up the good work!
